Fermoy Estate Semillon Sauvignon Blanc
Brilliant, pale straw yellow with green tints. Fresh & bright aromatics of nettle, kiwi fruit & lemon sherbet overlay a subtle cedar & talc spice note. The palate is bright, textured & refreshing – transitioning from blackcurrant leaf & dried herb notes to fleshy kiwi fruit & guava. A mouth-watering lemon acid crunch & subtle oak complexity provide drive, persistence & length. A portion of the blend (~20%) underwent fermentation & 4 month’s maturation in a combination of new & seasoned French oak, while the balance was fermented cool in stainless steel tanks to retain freshness & aromatics. Maturation on ferment lees contributed to texture, mouthfeel & overall complexity. Ready for immediate drinking & will continue to drink well over the next 2-3 years.
